Winter Collection 2019

This season's bonbon collection is inspired by my journey to Ecuador and, of course, our winter celebrations. Let's explore with chocolate.

Bonbons

Two flavors for the season - Manabi Cassis Truffle, and Winter Spice Truffle.

The Manabi cassis truffle is made with cocoa from that province in Ecuador; pairing with French cassis enhances its fruit notes. Manabi province is in central Ecuador. I had the pleasure of visiting the cooperative where the cocoa is processed, meeting some of the farmers, and visiting the orchards. This chocolate is made in Quito. 

The winter spice truffle is inspired by pain d'épice, a classic winter flavor. The fine grade white chocolate is made from ingredients sourced from Ecuadorian cooperatives. The milk is from a farmer cooperative in the Andes mountains. The sugar is from a farmer cooperative along the central coast. White chocolate can be awful, this one is not that. I had the pleasure of touring the facility in Quito where this chocolate is made.

Salted Butter Caramel

A classic caramel, soft and rich, fills a shell of 72% bittersweet chocolate.

To create this caramel, cream and salted butter from Sonoma county are blended with burnt sugar and finished with Maldon sea salt. The soft caramel fills a shell of smooth 72% Ecuadorian bittersweet chocolate.

Peanut Butter Pinecones

For several years I have been toying with pinecones in my chocolate work. I find them symbolic and nostalgic. They have been used for centuries as decorations in our winter holidays.

They are symbolic of the Christmas tree and and our aspirations for renewal at the solstice. With the heat of fire, they can open to provide seed for new growth. They hold nostalgia for playful days, climbing pine trees was a favorite pastime. In the Sierra Nevada mountains and along our ocean coast, conifers are found in our gorgeous California landscape. These chocolate pinecones are just cute and tasty.

Hand molded and painted pinecones, organic peanut butter, a bit of Maldon sea salt, and a blend of Ecuadorian chocolates, 49% milk and 72% dark. For a twist, this confection is made in the style of Italian Gianduja. The flavor is nutty and rich with a bit of salt.

Pâte de Fruit, Cassis and Red Wine

A warm winter flavor with French cassis purée, California Zinfandel blend and Caribbean allspice liqueur.

Pâte de Fruit is a classic French confection of seasonal fruit that allows great creativity. This version blends French cassis fruit and tropical allspice with a Zinfandel blend. The result is a warm flavor reminiscent of mulled wine.

Pâte de Fruit, Passion Fruit and Red Berries

Two flavors for the late harvest season - red berries with dark chocolate, and passion fruit with Grüner Veltliner white wine.

Late season Watsonville strawberries and raspberries are blended with smooth 64% chocolate for a confection with bright and rich flavors. Locally grown passion fruit is herbal and round in its flavor. It is blended with Austrian Grüner Veltliner white wine to brighten the acidity and deepen the herbal notes.

Pickup

Find me on Tuesday evenings at the Noe Valley Town Square Evening Market.

Include the date you would like to pickup. I will be there Tuesdays from November 19th to December 17th from 3 to 7pm. In case of rain in the evening, you will find me tucked into Noe Valley Wine and Spirits, just down the street near Church Street.

Delivery

Each Friday afternoon I will make deliveries in San Francisco. Please include the date. Delivery is available Fridays from November 22nd to December 20th. Please include the address and any contact information that is needed for the delivery.
