The Bakers’ dozen, a chocolate tasting and demonstration

While this is not a public event, The Bakers’ Dozen welcomes bakers into their community of professionals and enthusiasts from the Bay Area. I will be leading tastings and discussions around Specialty Grade chocolate. As this is a group that is hands-on, I will be demonstrating how to better manage one of the great mysteries of the world of pastry and confection, how to temper chocolate.
