Mary and Bert, as we call them, are dressed in their finest, reflecting nostalgia for the spring holiday and Old Europe. The original molds were fabricated by the company Anton Riche in Dresden, Germany, during the 1920’s, making them about 100 years old.
It is an adventure to work with molds of this age. They are precious, they hold history and the marks and dents of the users before David. They are messy and finicky and the results are wonderfully unique. The ability to offer more than a few of these of figures comes from using plastic copies. A maker here in the states has copied the originals very well. Most of the subtle details are carried through including the expressions and postures. Each figure reflects some history of the art of casting chocolate figures.
The figures are available in a rich 40% milk chocolate or 64% dark chocolate. These two figures are cast by hand, one at a time, by David, using chocolates which are made in Ecuador.
40% milk chocolate is rich and wonderful, a favorite of kids of any age. This chocolate has a delightful richness and flavor. The sugar in this chocolate is caramelized which yields a pleasant and light caramel flavor.
64% dark chocolate, a classic style chocolate made with dark roasted cocoa. The flavor journey robust, with light bitterness and acidity, and rich notes of Ecuadorian Nacional cocao. This one is a family favorite.
The ingredients of these chocolates are all Ecuadorian meaning the cacao fruit is grown in Ecuador, the sugar is grown in Ecuador and and the milk is processed from cows that are pasture raised- grass fed, in the Andes mountains. The chocolates are made in the country where the cacao fruit is grown. Origin-made chocolate represents about 1% of the total market for chocolate.
