Suggestions of love in our stormy mid winter, expressed with contemporary confections. This is my set for Valentines in four flavors.
Lux Ecuador is deep chocolate ganache enhanced with cognac and finished with 24 carat gold leaf. Built on chocolates processed by Conexion in Quito, expertly roasted and processed cocoa from a single coop, Fortaleza del Valle, Manabi province Ecuador. The flavor is uniquely Ecuadorian, heritage Naçional varietal cocoa within a confection that I hope will be considered elegant.
The classic salted butter caramel, mine is unctuous, intensely buttery and smooth. Sea salt enhances the butter without overwhelming. My version omits vanilla bean. The confection is finished with two variations of robust and bitter Swiss chocolates, Venezuelan origin. The dance of bitter and sweet on the palate is much like the experience of love and life.
Two flavors of pâte de fruit inspired by florals and our early budding flowers of this season in the SF Bay Area. Elderflower is the top note of a gelée built upon Autumn peaches and vanilla bean. Rose is the top note of gelée built upon Santa Rosa Plum and enhanced with complimentary warm spices of cinnamon and cardamom.
